new year, first beer

I'm ramping up to brew again next weekend. I'm going Belgian this time, trying for a really big beer with a modest hop profile and some fancy yeast work. I'm going to use the minimash approach from last time and hope things work out the same. My entire approach is going to be a bit more free-form, but my target gravity is 1.085 using light extract and two-row and caramel malts. I'm adding around 45 BU worth of hops, and experimenting with some European varieties, so this should be a mellow brew (although strong).
